I've got most of the equipment your asking about. I find I mostly use it for "racing" events (heck, not much choice, it's required) but not so much "just" HPDE events where it's not required. As for the comfort factor and "protection", well I'd say some protection is better than none - I find it interesting that while almost every HPDE registration or rules form I see read long sleeve shirts, long pants and close toed shoes at a minimum, the short sleeves and long pants parts are not always followed.
As for "comfortable" and singe layer, yes single is likely to be more comfortable, but correspondingly a WHOLE lot less safe. Personal opinion only, my thought would be if you feel you want/need additional fire protection, in for a penny, in for a pound. Get a real suit. If you ever decide to go up a level, e.g. Skip Barber or Jim Russell Racing School, or if you get your own racing car or decide to join in with a group and do something "simple" & low key like a LeMons or Chumps race, or even the One Lap, you'll have something that will work and you can use.

If I am driving anything on a track I will be wearing a flame-retardant NOMEX, racing suit and usually with a HANS device. In full race cars I will always wear my HANS, and sometimes a cool shirt. The suits are quite a bit warmer than cotton, of course.
For me its also a bit of a mental attitude thing too. If I am wearing a suit, then my thinking process has become a bit more focused about what I am doing with a car and with its proper preparation.
