My Master Tech says he can code this, is it possible to save the settings before he does this and compare afterwards to spot the changes ?

I am not usually there, plus I don't think he uses VAG.com they tend to use the Audi diagnotic computer?

You would need to get a VAG-COM printout before and after.
From the little I've seen I believe the 505X series of diagnotic boxes used by the dealer are menu driven and task-based. The tech selects a task from a menu, and it runs without much feedback to the tech other than status messages.
