The 2 times my car slept outside (while visiting family), when I started it in the morning after a cool night (15-18 Celcius), the first acceleration I've done with the car (without flooring it obviously) wasn't as fluid as usual. It's like the car hesitated a bit at around 2500-3000 RPM in first. Then, it was fine, but it seems odd to me.

Spark plugs and air filters are new. It is normal for this engine (V10)? Should I let it idle a bit more before stating when colder? If it's not normal, what should I check?

I would pull the codes to see if there's any misfires. May want to look into doing a carbon clean if you haven't done already. You can then look into cleaning the MAF sensors and testing the fuel injectors.
